One of my favorite dinners growing up was waffles - having breakfast for dinner just changed everything up, and on the other side of the counter, it feels like it is easier to make. The other night we decided on pancakes after a long day at school, and I've started using the "Supreme" recipe on the back of the Bisquick box - a couple of tablespoons of sugar, a little baking powder and vanilla - mmmmm. But we took it up a few more notches, adding some leftover coconut and pecans, then topping it with homemade cinnamon syrup. Nate loves to have ice cream - well on anything really, but especially on waffles and pancakes, so he added a few scoops of that and some crushed pineapple. Pretty sure we crossed the line from eating dinner to just giving our kids dessert instead.
Happy Belated Mother's Day:) One of my favorite moments - I got invited to Will's class for a little celebration, and when Miss Alex opened the door for us to come in, Will was watching for me, sitting on the carpet, bouncing as he said, "That's my mommy! Here, sit here. This chair is for you!" Then he just wanted to sit on my lap during the story and cute songs they sang for us. We got to make pipe cleaner bracelets, and they had made cards for us shaped like little purses and covered in glitter, as well as little boxes for our bracelets (also covered in glitter - love that stuff. NOT.) At bedtime I got him to sing one of the songs for me again. "Mother's Day, Mother's Day, it's a very special day, with a great big hug and some kisses (blows kisses, and wraps arms around self) too. That's how I say 'I love you.'"
Another favorite moment - reading with my kids, but also seeing them read alone, surround themselves with stories. And then there's Will and his kangaroo costume... He hopped around the house all afternoon after church yesterday, alternating between a kangaroo and a bunny. Even after we finally got some clothes on him.
